Ingredients
: Coriander seeds, Chilly, Cloves, Black Cardamom,
Cinnamon, Dry coconut, Black Cumin seeds, Cumin seeds,
Aniseeds, Chan Dal, Black Gram Dal, Turmeric, Asafoetida,
Mustard, Seasame, Fenugreek seeds,
Curry leaves, Oil, Salt.
Brinjal Sabji:
Heat1/2 katori oil in frying pan.
Add 1tsp mustard seeds and 1tsp mustard seeds and 1 tsp
cumin seeds. Add 1 1/2 katori raw onion paste. Saute it
till it becomes light brown. Cut 250g brinjals into 4
long pieces each, add it to the pan and saute it for 1/2
minute. Add 3 katori water and 3 tsp masala. Cover the
pan and get it cooked. Add 1/2 katori grated coconut and
coriander after the vegetable is cooked.
* You
can add this spice to any mixed vegetable to make it more
tastier.
*
This masala contains salt & chilly powder. But you
may add the same if required to taste.

Ingredients

Stone- flower, Dry coconut, Cassia, star Anise, Mace,
Turmeric, Oil, salt.
Kolhapuri Mix Vega Curry : Heat
1/4th kato ri Oil in frying pan. Add 1 kato ri carrot,
French beans, green peas each. Get it steamed for 2-3
minutes. Add 1/2 tsp garlic and ginger paste each &
1 katori raw onion paste. Saute, till onion paste gets
brown. Add 3 tsp kolhapuri masala and 3 katori water to
it. Allow it to cook on a low flame. Garnish it with finely
chopped coriander.
Kolhapuri - Cauliflower- Potato ( Potato Cauliflower
Kolhapuri ) :
Heat 1/4 katori oil in frying pan. Add 3 bowls of Cauliflower,
raw Potato each to it. Cover pan and get steamed for @
minutes. Add 1/2 bowls of warm water. 3 tsp Kolhapuri
Masala. Cover the pan and allow it to cook on a low flame.
Garnish it with finely chopped coriander.
* This masala contains
salt & chilly powder. But you may add the same
if required to taste.
* You can add this spice to any mixed vegetable to make
it more tastier.

Cloves, Cinnamon, Turmeric, Black Cardamom, Stone-flower,
Mace, Nagkeshar, Triphala, Star Anise, Aniseeds, Mustard
seeds, Fenugreek seeds, Oil, Salt.
Malvani Black Peas Usal : Cook 1/4 kg sprouted
black peas, with 1 katori water in it in a pressure cooker.(Instead
of black peas, we may use chana, moong, moth beans etc.)
Heat 1/4 katori oil in frying pan, add 1/2 tsp mustard
seeds, 1/2 tsp cumin seeds, 3/4th katori raw onion paste,
1/2 tsp garlic & ginger paste each. 1/4 katori fresh
coconut paste. After this, add 3 tsp Malvani masala, 3
katori water and cooked black peas. Stir it well. Sprinkle
finely chopped coriander.
Malvani Potato Bhaji : Heat 1/4th katori
oil, Add 3 katori chopped potato, get it steamed for a
while. Add 1/2 katori warm water, 3 tsp malvani masala.
Cover the frying pan, allow it to get cooked on a low
flame. Sprinkle finely chopped coriander
* This masala contains salt &
chilly powder. But you may add the same if required to

Mustard seeds, Chana Dal,Black Pepper, Cinnamon, Black Cardamom,
Cloves, Asafoetida, Turmeric, Aniseeds, Dry Coconut, Oil
, Salt.
Usal : Heat 1/4th katori oil in frying pan. Add
1/2 tsp mustard seeds, 1/2 tsp cumin seeds, 3/4th katori
of raw onion paste, 1/2 tsp paste of ginger and garlic each.
1/4 katori fresh coconut & saute it. After this add
3 tsp Usal masala & 3 katori water. Mix it well, sprinkle
finely chopped coriander.
* You can also use moong, beans, chana
etc. instead of moth beans.
* This masala contains salt & chilly powder. But you
may add the same if required to taste.
* You can add this spice to any mixed vegetable to make
it more tastier.
